My husband loves these sandwich thins! But, they are so expensive in store. The sandwich thins are $3 for 6 and this recipe makes 22 for less than $3.
These are soft and delicious as well as being healthy at less than 100 calories. The addition of grains and flax seed add are a healthy addition.
Although, I do use a little sugar in the dough, you could leave it out, but it helps with the yeast activity. The addition of gluten helps with raising the bread because wheat flour is heavy.
I hope you enjoy these sandwich thins as much as we do! Just slice them in half and add whatever you want to your sandwich. You can even cut the top off of them, slice inside the middle and have yourself a small pita pocket.

Homemade Sandwich Thins
Soft, healthy, low-calorie, frugal sandwich thin bread that will have you baking them time and time again.
Prepare dough in breadmaker.
In the order listed, add ingredients to breadmaker and set to Dough cycle (#6 on my machine). Mine will run a little over an hour. Let it continue to raise after it's done (leave in machine) until it's just over the top of breadmaker pan.
Flour surface and turn dough out. Roll in flour to coat, and form dough evenly and cut in half. Each half then gets cut into 11 equal pieces (cut each half in half, then each of those into 5 pieces - you will have extra pieces at end to make 2 more).
Prepare two 11x18 baking sheets by putting parchment paper on each. Start oven on Proof cycle or 185 degrees.
For each portion, roll out into a circle that is 4-1/2" in diameter. I use a bowl that size to cut by rolling out a little bigger. Place each sandwich thin dough circle close together on parchment-lined sheet pan 11x18, which will fit 11 (4 on each side and 3 down middle)
Raise and Bake
Put baking sheets in oven and allow the sandwich thins to rise until double height. Then, turn on oven to 325 degrees. The top tray will be done baking when the preheating is done. Remove that tray and move the other tray up and allow to bake for 8 minutes.
Allow both trays to cool completely, then put sandwich thins in bread bags and store or freeze on their side (storing the sandwich thins on the flat side will cause them to smoosh)..
To use, split sandwich thins in half. Each sandwich thin is 100 calories.
